At the helm of the kitchen of Cortile Arabo, chef Massimo Giaquinta traces a path that combines instinct and research, tradition and experimentation. Alongside him, a close-knit brigade shares the same attitude, passion, love for the territory and the most advanced preparation techniques. Here, the individual does not exist, and it is what we are most proud of. Because great cuisine is born from dialogue, from the perfect harmony between hands, thought and technique. For centuries, the seaside village of Marzamemi has been a crossroads of cultures, stories, and flavors. The winds that cross the ancient tuna fishery bring with them the stories of merchants and fishermen, of contaminations that have made Sicily a mosaic of influences.
