Chef Massimo Giaquinta
Massimo Giaquinta leads the kitchen of Cortile Arabo with a lucid, instinctive, never conventional gaze. Born in Nairobi to a Kenyan mother and a Sicilian father, he chose his path by going against the tide, moved by a simple idea: Cooking to make others happy.
Per lui, la cucina è rigore ma anche libertà. It is memory, but also possibilities. A living laboratory, where tradition is observed, respected, never suffered.
Each dish is born from a reflection on what we are, on what we have received, on what we can leave. Teaming up, creating harmony, transmitting beauty: this, for him, is the true meaning of the job. A daily gesture that speaks of respect, shared happiness, and a dream that continues to take shape.

The team
Alongside chef Giaquinta, there is a kitchen brigade made up of passionate professionals, including his brother Giuseppe as sous chef. This team shares Commitment to culinary excellence, reinterpreting the flavors of Mediterranean cuisine and offering dishes that enhance the freshness of raw materials. Each service is a choral work, in which technique and sensitivity intertwine to give shape to an essential, precise cuisine, capable of telling Marzamemi and the richness of our island. The success of Cortile Arabo is also the result of the commitment of Santo Paternostro and Mariangela Fronterrè. This enterprising couple strongly believed in the project, investing in quality catering and helping to create a unique reality of its kind. Their dedication is reflected in the warm welcome and identity that characterize the restaurant.
