Our roots, our future


Tradition in motion
Research, for us, means starting from the roots of Sicilian cuisine to unravel them, reinterpret them, take them elsewhere, without ever distorting them. Each dish is born like this: from a gesture that has rigor inside, but also freedom. We reinterpret Historical recipes, familiar ingredients, ancient techniques, pushing us towards new forms, essential, personal. It is a constant process, which does not seek to amaze, but to reveal. A subtle balance between what we already know and what we don’t expect. Because true innovation, when it is done with care, always tastes like something we had forgotten.


Land, sea and heart
The best catch, the freshest vegetables grown in the surrounding countryside, meat from sustainable farms: quality inspires and guides us every day.
When we choose raw materials, we do it out of respect. Respect for the product, for those who have grown or fished it with care, for those who will sit at the table. Each ingredient must speak for itself, with its own intensity, one’s own truth. Even the leavened products, prepared every day in our kitchen, follow the same principle: a few elements, rigorously selected, carefully processed.
Sicilian soul
Located in the heart of the seaside village of Marzamemi, Cortile Arabo is a place rooted in the territory, but open by nature. The architecture of its courtyard, with three Arab-style entrances, becomes a metaphor for our cuisine: a vision made up of multiple accesses, reading angles, different sensitivities. There is the courage of intuition, the warmth of hospitality, attention to detail, the authenticity of the material.
This deep bond is reflected in each dish, which tells the flavor with a personal, essential and conscious look. A cuisine that speaks the language of Sicily, but that does not stop searching.
